Corn Chowder

It all started when…

the two of us were feeling unfulfilled. We both have always dedicated ourselves to supporting our local communities and traveling in a bus around the USA made it difficult to find ways to help people that both needed and wanted help. We didn’t have enough time in each place we visited to connect with the right people to see where we could volunteer our time and make an impact. So, in the fall of 2017, we took matters into our own hands are started cooking meals out of our little school bus to feeds the homeless in each city we visited. Eventually, the meals were graciously paid for by our YouTube audience which allowed us to feed 1,500 people experiencing homelessness in the USA. This corn chowder recipe was one of the first meals we prepared and distributed. The people we served it to loved it and I think you will too.

Ingredients
2-3 tbsp olive oil
1 white onion (chopped)
2 cloves garlic (minced)
2 medium sweet potatoes (cubed-small)
Salt and pepper (to taste)
3 ears corn (kernels sliced off) or 1 can of corn
2 cups bone broth
2 cups milk (we use oat milk but almond or regular will do)
1 stalk of green onion (for garnish)
1-2 tbsp nutritional yeast for a cheesy flavor (optional)

Directions

1. In a medium sized pot over medium heat, add olive oil, onion, and garlic and sauté for 3-4 minutes.

2. Add potato, season with a little salt and pepper, and cover to steam for 4-5 minutes.

3. Add corn, broth and milk then cover, and bring to a low boil. Reduce heat to low. Cook until the potatoes are soft.

4. Use immersion blender to slightly blend up soup in pot while still keeping some potatoes and corn pieces in tact for texture. (If you don’t have an immersion blender add 3/4 of the soup to a blender and blend until creamy and smooth then transfer back to pot) If using nutritional yeast, add now.

5. Taste and adjust seasonings as needed. Cook for at least 10 minutes to let thicken. The longer it simmers, the more flavorful it will be.

6. If you’re feeling fancy, add chopped green onion, pepper & a dash of paprika for a one way ticket to flavortown!
