Mom’s Banana Bread

It all started when…

I woke up on a Saturday morning to the smell of fresh baked goods coming from the kitchen downstairs. This was probably 10 years or so ago. Being a teenager, staying in bed until the early afternoon was a staple of my weekend routine but the smell of sweet goods was ringing my sweet tooth alarm early. I went downstairs and found my mom pulling small tin bread loaves out of the oven. This was the morning she reinvigorated her love for baking and for the next 4 years that I lived in that house, weekend baked goods was a weekend routine. This was the recipe she made that day…

Ingredients
3 ripe bananas (mashed)
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/4 cup melted butter
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 teaspoon salt
1/2 Cup Walnuts (optional)

Directions

1. Preheat oven to 325 degrees F

2. Grease a 9x5 inch loaf pan

3. Mix together all of the wet ingredients (bananas, butter, eggs). Mix together all of the dry ingredients (sugar, salt, baking powder, baking soda, flour) and slowly add the dry ingredients to the wet ones

4. Grease the loaf pan and pour the batter in.

5. Bake in the oven for 50 min-1 hour, or until a toothpick inserted in the center of the bread comes out perfectly clean! (we check around 45 min and every 5 min after)

6. Let cool for 20 min, top with butter or jam .and try not to eat the whole loaf within 24 hours like we do
